Curly Kale

      Kale is the single most nutritious vegetable on the planet. It is cold-hardy and resistent to pests and diseases, and will grow quite well even in poor soil. It will winter over in many areas with minimal protection, although most will bolt to seed as soon as the weather gets hot.

      Curly kale and various colours of ornamental kale are the most commonly seen kinds, although peacock kale will show up in some mesclun seed mixes. All kales are edible, no matter what their colour, and all have similarly high nutrient content. Most tend to be bitter in warmer weather, but will become quite sweet and tasty if left to be touched by the first frost of winter, and can be harvested right up until deep freeze.

      This photo shows several curly kales, the most commonly seen kale, even though all forms of kale (whatever their colour) are equally edible and equally nutritious.
