Leafy Endive

      Leafy endive looks a little like a head of loose-leaf lettuce, until you look a little more closely. The leaves are long and thin, and a little curly around the edges. Leafy endive offers a good complement of trace minerals and amino acids, and is an excellent source of vitamin A and a number of other vitamins and minerals.

      The taste is slightly bitter; like chicory, leafy endive (also known as 'endivio') is a relative of the dandelion. Leafy endive is often confused with its cousin, chicory; they're all part of the same botanical family, 'Cichorium'.

      Like it's weedy relatives, this plant is loaded with nutrition, and is beloved by canaries everywhere. It is more tender than broccoli raab or chicory, and requires a bit more tending, but the results are worth it! The leaves have an almost prickly texture and that slightly bitter taste that so many birds seem to prefer.
